If you know my husband at all, you would know the way to his heart is definitely through his stomach. Unfortunately we are all out of lamb shanks, so this Valentine's day I'm going to have to come up with another dish.

Fall off the bone Lamb Shank
2 lg Onions
4 Edible Acres Lamb Shanks
1.5 cups red wine
1/2 cup balsamic vinegar
1/3 cup olive oil
2 tbsp brown sugar
4 cloves Edible Acres garlic, pressed or finely chopped
1 liter jar tomatoes (can be diced or whole)
1 bunch basil, chopped
1 tbsp of both salt and pepper
Preheat oven to 350 degrees F
Place Onions in the bottom of a roasting pan.
Place Lamb Shanks on Onions and then cover lamb with pressed garlic
Mix wine, vinegar, olive oil, brown sugar, salt and pepper and pour over lamb
Top with tomatoes and basil
Cover and place in preheated oven. Cook 3 hours (I turn lamb at about the 2 hour mark, to brown underside)
Serve and enjoy!
